So first of all watch this video and survive at least for 10 minutes :D
After following those steps from video and having enough army, head to Sultan Ahmed's castle. Probably he has less army than any other opponent. In case, he is not the one, go to another who has less protection than anyone in game. Using Arabian horse archers is a better option. you can move them quickly and their reaching to opponent's castle is better than normal archers. Make swordsmen and send them to opponent's castle while your opponent's archers and slingers are busy with your horse archers and crossbowmen. you can use balista and catapult for destroying enemy's castle.
